- Roasted whole Caerhun hen pheasant stuffed with ricotta and thyme, and garnished crisp dry cure bacon
- Rack of Welsh lamb with minted hollandaise and a fettucine of vegetables
- Monkfish wrapped in prosciutto on a bed of creamed leeks
